Roasted Squash

Super quick and easy! Roasted vegetables were my life saver when I first started to change my diet (about 10 years ago). They were a great way to satiate a french fry craving!

You can use sweet potatoes, carrots, broccoli, or brussels sprouts.

  • Slice zucchini and yellow squash (the thicker the juicier, the thinner, the crispier)
  • Spread in a single layer on cookie sheets sprayed with oil (I used coconut oil)
  • Sprinkle seasonings on top: garlic powder, onion powder, chili powder, smoked paprika, salt and pepper
  • Roast at 425 degrees 15-20min
  • Broil 2-3 minutes
